~ Strawberry Pie Anyone ~

Sometimes I look up and notice the week is almost gone, seems like they fly by a lot quicker than use to, do notice the same thing happening to you? How's your week going? My week has been a very productive one enjoying the moments as they come. 

 I'm the kind of gal that makes sweets on a whim, a craving, a spur moment or just because. This week was one of those weeks. Come a long and I'll share how I put together this delicious No Bake Strawberry Pie. I don't recall where I ran across this recipe I've made it for years, it's always a big hit with the family.
If you're in a hurry for something sweet light and airy

this pie is perfect for you and your family.
Gather the ingredients, jello, cool whip and graham cracker pie crust. I usually use sugar free jello, for some bizarre reason that's not what I grabbed while out shopping, hummm  could it have been I didn't have my glasses on to read all of the print? I've always used Strawberry Jello, you can certainly use another flavor, I would love to hear if you steer away from the Strawberry flavor.
You know the drill, depending upon the size jello you purchase, you're going to add boiling water and then cold. Since I bought the large box of jello it called for 2 cups boiling water and 2 cups cold water. Stir, stir, stir, until all the granules are smooth. Now off to the refrigerator. You're going to let it set to a stiff stage, not firm, you want to be able to add the cool whip.
  Let the cool whip set out at room temperature, your pie will work up a lot smoother.
After the jello has been in the refrigerator, I check after an hour or so, I can't tell you how long it takes to set to a stiff stage, I've never really timed it, I'm always flitting around here doing something else. Just keep an eye on it, you don't want it to set to a firm stage. Stir in the cool whip, making sure it's smooth. Note to self: remember to leave the cool whip out at room temperature!
I use Keebler Graham Cracker Pie Crust, if you're creative and have loads of time you can certainly make your own.
Notice how lumpy mine is? Well.... that's because this gal, the one that does things on the spur of the moment forgot to leave the Cool Whip out at room temperature. It doesn't change the taste just the presentation. Pour your jello mix into your pie crust. Since I used the large box of cool whip we have 2 beautiful pies to enjoy. Now, pop those babies back into the refrigerator and let them set up to a firm stage.

Oh Yes, Lynne, I'd love a slice (or 2) of that pie right now. If I had any pie crusts, I'd be whipping this pie up tonight. I don't want to get out in the cold to go to the store, so it'll have to wait for another day. Thank you for sharing this. I know it will become a hit with my family too. You show an 8 oz. container of cool whip - do you use the whole container for 2 pies (4 oz for 1 pie)?
